Spinach & Mushroom Quiche

​Ingredients:
10 oz. box frozen Spinach
8 oz. Mushrooms
1 small Onion
1 Clove Garlic
4 Large Eggs
1 Cup Milk
2 oz. Feta Cheese
¼ Cup Grated Parmesan Cheese
½ Cup Mozzarella Cheese
Salt-free seasoning to taste

Preheat Oven to 350 degrees
Prepare 9-inch pie pan by spraying with non-stick cooking spray.


1. Wash and slice mushrooms into thin pieces.
2. Press garlic (or chop into small pieces)
3. Spray skillet with non-stick cooking spray or very small amount of oil.

4. Add mushrooms and garlic and cook on medium heat until all moisture has evaporated.
5. Squeeze thawed spinach to get rid of as much water as possible. Put into a medium-sized bowl.

6. Add mushrooms and garlic to spinach – mix.
7. Add Feta Cheese to veggie mixture – mix.
8. Add the veggie/Feta mixture to the 9-inch pie pan.

9. Whisk in a medium bowl eggs, milk, and Parmesan cheese. Add no-salt seasoning of choice.
10. Pour mixture on top of veggies in pie pan.
11. Top with mozzarella cheese.

Place in oven. Bake for 45 minutes or until top is golden brown.
